Sensient Colors LLC won a federal order, published [12 May 2025](https://www.govinfo.gov/content/pkg/FR-2025-05-12/html/2025-08248.htm), that widened butterfly pea flower extract into cereals, crackers and chips, and that petition sets the tone for the anthocyanin market. Anthocyanins are the water-soluble red, purple and blue pigments of grapes, carrots, berries and flowers; the anthocyanin market covers extracts sold as food colour, supplement actives and cosmetic pigments. Douglas Insights sizes the 2025 market at USD 483.1 million, built as 2,265 tonnes of powder-equivalent colour at USD 213.3 per kilogram, and projects USD 793.6 million by 2035, a 5.09% annual revenue rate. The study belongs to our [food ingredients coverage](https://www.douglasinsights.com/industry/food-beverages/food-ingredients/), and every number follows the [Douglas Insights research methodology](https://www.douglasinsights.com/research-methodology/).

## Which anthocyanin suppliers control grape, carrot and butterfly pea supply, and how concentrated is competition?

Three suppliers hold 44.7% of 2025 anthocyanin revenue, by Douglas Insights estimate: Oterra, Givaudan and Sensient. Their edge is breadth across carrot, grape and berry sources and, for Sensient, an approved United States petition. The remaining 55.3% splits among GNT, Kalsec and regional extractors.

Oterra leads with a 17.8% share, worth USD 86.0 million. The Danish group took over the Diana Food colouring arm from Symrise, including about 60 staff at Cossé-le-Vivien in France, a site with a long record of red beet and carrot processing. Its board named Susanne Arfelt Rajamand chief executive in a release dated [12 August 2026](https://oterra.com/article/susanne-arfelt-rajamand-appointed-ceo-of-oterra), effective 12 October 2026, and set a goal to double the core United States business within two years after double-digit US growth this year.

Givaudan ranks second with 14.6%, or USD 70.5 million. The Swiss group bought DDW, The Color House, and said at closing on [9 December 2021](https://www.givaudan.com/print/960781) that the deal made it the number two global player in natural colours; DDW brought about USD 140 million of 2020 sales, 315 associates and 12 factories. Sensient follows at 12.3%, or USD 59.4 million. Its Color Group earned USD 700.6 million of 2025 revenue and USD 141.3 million of operating income, per the [results filed 13 February 2026](https://www.sec.gov/Archives/edgar/data/310142/000114036126005177/ef20065512_ex99-1.htm); Douglas Insights puts roughly 8.5% of that colour revenue in anthocyanin lines.

GNT Group, maker of EXBERRY colouring foods from fruit and vegetables, holds 9.1%, or USD 44.0 million, built on vegetable concentrates rather than solvent extracts. Kalsec, a natural colour and extract house, holds 3.4%. Symrise is the notable exit. Scale matters less than crop access.

| Company | Base of position in anthocyanin | Share 2025 | Revenue 2025 |
| --- | --- | --- | --- |
| Oterra | Ex-Diana and ex-Chr. Hansen carrot and grape sourcing | 17.8% | USD 86.0 million |
| Givaudan | DDW plants, number two in natural colours | 14.6% | USD 70.5 million |
| Sensient | Butterfly pea petition, Color Group scale | 12.3% | USD 59.4 million |
| GNT Group | EXBERRY vegetable concentrates | 9.1% | USD 44.0 million |
| Kalsec | Natural colour blends, Vegetone range | 3.4% | USD 16.4 million |
| Others | Regional extractors | 42.8% | USD 206.8 million |

## Which anthocyanin pigments, E 163 sources and end uses fall inside this study?

Anthocyanin products worth USD 483.1 million fall inside the 2025 scope: colour extracts, colouring-food concentrates and standardised supplement extracts. The study covers six crop sources, five applications and two physical forms, and it excludes fresh fruit, juice sold as a drink and synthetic dyes.

European law lists anthocyanins as additive E 163, obtained by maceration or extraction with sulphited water, acidified water, carbon dioxide, methanol or ethanol from edible fruit or vegetables. United States rules split the same pigments across grape skin extract under 21 CFR 73.170, fruit and vegetable juice colours, and butterfly pea flower extract under 21 CFR 73.69. Supplement-grade bilberry and elderberry extracts are counted at their colour-equivalent tonnage. Scope is pigment value, not crop value.

## Which anthocyanin source segment leads: grape marc, purple carrot or butterfly pea?

Purple and black carrot leads anthocyanin sales with 27.4%, or USD 132.4 million in 2025. Carrot pigment is acylated, so it holds a red shade at higher pH than grape colour, and beverage, dairy and confectionery buyers pay for that stability.

| Source segment | Share 2025 | Value 2025 | Growth 2026-2035 | Value 2035 |
| --- | --- | --- | --- | --- |
| Purple and black carrot | 27.4% | USD 132.4 million | 5.9% | USD 234.9 million |
| Grape skin and marc | 22.9% | USD 110.6 million | 3.1% | USD 150.1 million |
| Berries and elderberry | 16.8% | USD 81.2 million | 4.6% | USD 127.3 million |
| Purple sweet potato | 13.7% | USD 66.2 million | 5.8% | USD 116.3 million |
| Red cabbage and radish | 11.3% | USD 54.6 million | 4.9% | USD 88.1 million |
| Butterfly pea flower and others | 7.9% | USD 38.2 million | 7.2% | USD 76.6 million |

Grape skin and marc holds 22.9%, or USD 110.6 million, because wine pressing leaves cheap marc, yet its 3.1% growth is the slowest: the red turns violet above pH 4. Berries and elderberry earn USD 81.2 million, a 16.8% share, carried by supplement buyers who want a named fruit on the label. Purple sweet potato takes 13.7%, or USD 66.2 million, and grows 5.8% as snack and noodle makers adopt tuber colour. Red cabbage and radish hold 11.3%, worth USD 54.6 million; radish gives a strawberry-red that replaces Red No. 40 in candy.

Butterfly pea flower and others is the fastest-growing source at 7.2% a year, from USD 38.2 million to USD 76.6 million. Blue is the hardest natural shade, and the flower's delphinidin pigments now carry a wider United States approval. Small base, steep curve.

## Which beverage, confectionery and supplement uses absorb anthocyanin tonnage?

Beverages absorb 36.8% of anthocyanin value, or USD 177.8 million in 2025, because acidic drinks below pH 3.5 keep the pigment in its bright red flavylium form. Confectionery and bakery follow at 21.5%, then dietary supplements at 17.2%. Cosmetics take the smallest slice.

Confectionery and bakery spend USD 103.9 million, mostly on gummies and coated candy that drop Red No. 40. Dietary supplements spend USD 83.1 million on standardised bilberry, elderberry and blackcurrant extracts sold for their polyphenol content rather than their colour. Dairy and frozen desserts account for 15.9%, or USD 76.8 million, in yoghurt fruit preparations and ice cream ripples. Cosmetics and personal care take 8.6%, or USD 41.5 million, in lip tints and botanical skin serums.

Liquid concentrates make up 58.3% of value, or USD 281.6 million, because drink plants dose by volume. Spray-dried powders account for 41.7%, or USD 201.5 million, and win in dry mixes, tablets and coated confectionery where water activity must stay low.

## Why are food makers swapping Red No. 40 for anthocyanin reds, purples and blues?

Anthocyanin tonnage grows at a gross 5.40% a year before restraints, and federal pressure on petroleum dyes supplies the largest single push. Douglas Insights counts four drivers, worth 2.40, 1.55, 0.90 and 0.55 points; after 1.30 points of restraints they net to the 4.10% volume leg.

### United States dye phase-out: 2.40 points

The Department of Health and Human Services (HHS) and the US Food and Drug Administration (FDA) said on [22 April 2025](https://www.hhs.gov/press-room/hhs-fda-food-dyes-food.html) that they would work with industry to remove six synthetic dyes, including Red No. 40, Yellow No. 5 and Blue No. 1, by the end of 2026, and would revoke Citrus Red No. 2 and Orange B. Red No. 40 is the dye anthocyanins most often replace in drinks and candy. Douglas Insights models 2.40 points of annual tonnage growth from that switch, concentrated in 2026 to 2029, which is why North America grows 6.43% a year against 4.08% in Europe.

### Clean-label reformulation in drinks and candy: 1.55 points

Global beverage and confectionery brands are moving whole portfolios to colours from fruit and vegetables, not only their United States lines. Oterra reported double-digit US growth this year and aims to double its core US business within two years, a pace that signals reformulation orders already in hand. Sensient's Color Group lifted revenue 8.1% in 2025, from USD 647.9 million to USD 700.6 million, and operating income 18.2%, per its [year-end filing](https://www.sec.gov/Archives/edgar/data/310142/000114036126005177/ef20065512_ex99-1.htm), the clearest public sign that colour reformulation work is compounding. Douglas Insights assigns 1.55 points to this reformulation, about 35 tonnes of extra powder-equivalent colour a year at the 2025 base of 2,265 tonnes.

### Supplement polyphenols and new blue approvals: 0.90 and 0.55 points

Dietary supplements add 0.90 points. Standardised bilberry and elderberry extracts carry a higher anthocyanin load per kilogram than colour grades, so a small tonnage gain lifts value quickly. Blue and violet shades add the last 0.55 points: the FDA order on butterfly pea flower extract took effect on [26 June 2025](https://www.govinfo.gov/content/pkg/FR-2025-05-12/html/2025-08248.htm), and FDA assumed a maximum of 2% anthocyanins in that extract when it estimated a 90th percentile intake of 9.3 milligrams per person per day. That approval opened crackers, pretzels and tortilla chips to a natural blue for the first time. Snack makers now have a choice they lacked in 2024.

## Which pH, heat and light hurdles slow anthocyanin adoption?

Three restraints remove 1.30 points from anthocyanin tonnage growth: colour instability (0.60 points), a cost premium over synthetic dyes (0.45 points) and crop supply risk (0.25 points). Each one is technical or agricultural, not regulatory, and each narrows slowly. Net growth stays positive.

Instability removes 0.60 points. Anthocyanins shift from red at pH 3 to violet near pH 5 and fade with heat, light and ascorbic acid, so neutral-pH bakery, savoury sauces and retorted foods stay with beet, paprika or carmine. European Food Safety Authority (EFSA) reviewers also found the toxicology file too thin to set a numerical acceptable daily intake (ADI) for E 163, which keeps some formulators cautious.

Cost removes 0.45 points. A peer-reviewed techno-economic study of hibiscus calyx extraction put crude anthocyanin powder cost at USD 164.28 per kilogram with ultrasound and USD 176.31 with heat, far above synthetic dye cost per colour unit. Crop risk removes 0.25 points. Purple carrot, elderberry and grape marc each come from one harvest a year, so a poor season tightens supply for 12 months.

## Which regions buy the most anthocyanin colour, and where is uptake quickest?

Europe buys the most anthocyanin colour, USD 167.2 million or 34.6% of 2025 value, because E 163 has been an approved additive for decades. North America grows fastest at 6.43% a year and passes Europe before 2035. Asia Pacific ranks third, Latin America fourth.

| Region | 2025 | 2035 | Growth 2026-2035 |
| --- | --- | --- | --- |
| Europe | USD 167.2 million | USD 249.4 million | 4.08% |
| North America | USD 141.1 million | USD 263.1 million | 6.43% |
| Asia Pacific | USD 120.3 million | USD 200.1 million | 5.22% |
| Latin America | USD 34.3 million | USD 53.1 million | 4.47% |
| Middle East and Africa | USD 20.2 million | USD 27.9 million | 3.28% |

Europe reaches USD 249.4 million by 2035 at 4.08%, a mature base where E 163 is already standard. North America climbs from USD 141.1 million to USD 263.1 million and adds USD 122.0 million, or 39.3% of all new anthocyanin revenue, as the dye phase-out lands. Asia Pacific grows 5.22% to USD 200.1 million, led by purple sweet potato colour and regional extract output. Latin America is the wildcard at USD 34.3 million: Brazil's Anvisa Normative Instruction No. 286 removed magenta fuchsin from cheese rinds after an 18-month transition, and carmine and anthocyanin compete for that work. The Middle East and Africa hold USD 20.2 million and grow 3.28%, the slowest pace.

## How much do anthocyanin powders and liquid concentrates cost per kilogram?

Anthocyanin colour realised an average USD 213.3 per kilogram of powder-equivalent in 2025, by Douglas Insights estimate. Liquid concentrates sell lower per colour unit, spray-dried powders higher, and standardised supplement extracts sit at the top of the range. Grade and form set the band.

The average starts from the published cost floor of USD 164.28 to USD 176.31 per kilogram for crude anthocyanin powder, a midpoint of USD 170.3. Sensient's Color Group earned a 20.2% operating margin on USD 700.6 million of 2025 sales, and grossing the cost floor up by that margin gives USD 213.3. Douglas Insights estimates realised bands of USD 150 to USD 205 per kilogram powder-equivalent for liquid concentrates, USD 190 to USD 260 for spray-dried powders, and USD 400 or more for supplement extracts standardised to 25% anthocyanin.

Price rises 0.95% a year to USD 234.5 per kilogram by 2035. Acylated carrot and radish grades and blue shades command premiums; grape colour, made from a wine by-product, sits at the low end. Volume, not price, does the work: 4.10 of the 5.09 points come from tonnage.

## Which FDA and EU E 163 rules govern anthocyanin labels and specifications?

Two rulebooks shape anthocyanin sales: EU additive E 163 under Regulation (EU) No 231/2012, and several FDA colour listings exempt from batch certification. A colour approved in one market is not automatically approved in the other. Labels follow whichever route the supplier used.

The European Commission adopted Regulation (EU) 2026/340 on [16 February 2026](https://eur-lex.europa.eu/eli/reg/2026/340/oj/eng); in force from 9 March 2026, it corrects the French, Slovene and Czech wording of the E 163 definition so the permitted extraction solvents match the other language versions. In the United States, 21 CFR 73.170 limits grape skin extract to still and carbonated drinks, ades, beverage bases and alcoholic beverages, and exempts it from certification. The butterfly pea flower order lets anthocyanin blue be used at good manufacturing practice levels with no numeric cap.

Labelling separates the two routes. In Europe, a colouring food made from concentrated carrot or radish carries no E number, while a selectively extracted pigment is E 163. That distinction steers GNT toward concentrates and Oterra and Givaudan toward both.

## What if the FDA dye deadline slips: how do anthocyanin forecasts to 2035 change?

The anthocyanin base case reaches USD 793.6 million by 2035 on 4.10% tonnage and 0.95% price growth. A slower path ends at USD 656.4 million, and a faster path at USD 947.9 million, depending mostly on how strictly the United States enforces its 2026 dye target.

| Case | Tonnage growth | Price growth | Revenue growth | 2035 value |
| --- | --- | --- | --- | --- |
| Slower | 2.60% | 0.50% | 3.11% | USD 656.4 million |
| Base case | 4.10% | 0.95% | 5.09% | USD 793.6 million |
| Faster | 5.60% | 1.30% | 6.97% | USD 947.9 million |

The slower case assumes the HHS target of [22 April 2025](https://www.hhs.gov/press-room/hhs-fda-food-dyes-food.html) stays voluntary and brands keep Red No. 40 in candy, trimming tonnage growth to 2.60%. The faster case assumes the butterfly pea order of [12 May 2025](https://www.govinfo.gov/content/pkg/FR-2025-05-12/html/2025-08248.htm) is followed by more blue approvals and full beverage conversion, lifting tonnage growth to 5.60%. One extra point of annual tonnage growth adds USD 79.6 million to the 2035 anthocyanin total; one point less removes USD 73.0 million.

Published forecasts for anthocyanins run from 3.8% to 6.03% a year. Our 5.09% lands just above the middle, because those studies predate the federal dye plan.

## Douglas Exclusive: the anthocyanin reformulation calendar

The Douglas Exclusive calendar is a Douglas Insights model, built from 9 dated primary-source inputs and our 2025 tonnage build of 2,265 tonnes. It is not an official register. Each milestone is tagged with the anthocyanin tonnage our model ties to it, so buyers can see when demand arrives, not only how much.

| Milestone | What it changes | Modelled tonnage effect |
| --- | --- | --- |
| [22 April 2025](https://www.hhs.gov/press-room/hhs-fda-food-dyes-food.html) | HHS and FDA plan to retire six petroleum dyes | +2.40 points a year, 2026 to 2029 |

| [9 March 2026](https://eur-lex.europa.eu/eli/reg/2026/340/oj/eng) | Correction enters into force | French, Slovene, Czech texts aligned |
| [12 August 2026](https://oterra.com/article/susanne-arfelt-rajamand-appointed-ceo-of-oterra) | Oterra names a new chief executive with a US doubling goal | Confirms 1.55-point reformulation leg |
| [12 October 2026](https://oterra.com/article/susanne-arfelt-rajamand-appointed-ceo-of-oterra) | New Oterra chief executive takes office | US capacity decisions due |
| [End of 2026](https://www.hhs.gov/press-room/hhs-fda-food-dyes-food.html) | Target date for the six-dye exit | Peak conversion year 2027: about 2,455 tonnes |

The calendar's finding is timing. Douglas Insights calculates that 54.6% of gross anthocyanin tonnage growth, the 2.40-point dye exit plus the 0.55-point blue opening, hangs on milestones dated in 2025 and 2026, so supply contracts for the 2027 carrot and grape harvests matter more than any later event. Buyers who lock purple carrot volume before the end-2026 target avoid the scramble.

## Receipts: how do 2,265 tonnes of anthocyanin colour make USD 483.1 million?

Anthocyanin revenue equals 2,265 tonnes of powder-equivalent colour times USD 213.3 per kilogram, which gives USD 483.1 million for 2025. Five regional builds and six source segments each sum to that total, and the 2035 value compounds tonnage and price separately.

Price comes from two sourced inputs: the USD 164.28 to USD 176.31 cost floor and Sensient's 20.2% Color Group margin. Tonnage is derived from the supplier shares, with the top five firms worth USD 276.3 million, or 57.2% of the total. Cross-check one: published estimates for 2023 to 2025 of USD 348 million to USD 626 million bracket our USD 483.1 million within 1% of their USD 487 million midpoint. Cross-check two: our Sensient line of USD 59.4 million equals 8.5% of its colour revenue, plausible for a broad colour house. Cross-check three: the 2035 segment values sum to USD 793.3 million, within 0.04% of the USD 793.6 million total.

## Where should anthocyanin buyers lock supply before the 2027 harvest?

Anthocyanin buyers should secure acylated purple carrot and radish colour first, because those 2 sources hold 38.7% of 2025 value and grow faster than grape. Beverage and candy makers converting Red No. 40 need contracts signed before the end-2026 target.

Our sister reports on the [Gardenia Yellow Pigment (GYP) Market](https://www.douglasinsights.com/gardenia-yellow-pigment-gyp-market/) and the [Chlorophyll Color Market](https://www.douglasinsights.com/chlorophyll-color-market/) track the yellow and green shades that complete a natural palette, while the [FD and C Lakes Market](https://www.douglasinsights.com/fd-and-c-lakes-market/) shows the synthetic side losing ground. A blended natural red, yellow and blue system costs more per colour unit, yet Douglas Insights expects North American anthocyanin spending to reach USD 192.7 million by 2030, halfway along its climb.
