Liquid ready-to-use stock, soup mixes and seasoning blends without a stock base sit outside the scope, which keeps the count tied to the cube aisle.

## Who dominates stock cube shelves, from Knorr and Maggi to Jumbo and Oxo?

Unilever leads the stock cubes market with an estimated 27.4% share in 2025, worth about USD 1.99 billion, ahead of Nestle's Maggi at 19.6%. With GBfoods at 6.8%, the top three hold 53.8% of revenue; regional specialists and private label split the remaining 46.2%.

Douglas Insights estimates those shares from disclosed brand data rather than from company segment reports, since no maker reports stock cubes as a line item. Unilever says Knorr became a EUR 5 billion brand after three years of growth, sells 600 bouillon cubes every minute and is present in more than 90 countries, with its professional range in 65 or more ([Unilever, 30 August 2024](https://www.unilever.com/news/news-search/2024/the-global-bestseller-behind-knorrs-5-billion-success-story/)). Nestle built Maggi's position on volume in Central and West Africa. GBfoods manufactured more than 4 billion Jumbo cubes a year for Africa when it formed a pan-African venture with Helios Investment Partners in 2017, according to that announcement, with operations in over 30 African countries. Hard cubes reach USD 6.04 billion by 2035, growing 3.62% a year, because household penetration in West Africa is already near saturation and gains now come from population and portions. Tablets, the 10 g format Nestle sells beside its 4 g cube, earn USD 1.3 billion and grow 4.41% as larger families buy one tablet per pot. Powders and granules hold USD 1.11 billion, a share built on foodservice tubs where cooks dose by the spoon, rising 4.18% a year. Jelly and paste pots hold USD 608.7 million in 2025 and climb to USD 1.06 billion, the fastest rate at 5.73%, because European and North American shoppers trade up from cubes to concentrated pots priced near USD 0.11 per cube-equivalent.

## Why are bouillon cube volumes still climbing after a century on the kitchen shelf?

Stock cube volumes grow 2.35% a year to 178.9 billion cube-equivalents in 2035 because four forces still add cooks: household formation where cubes are the default seasoning, foodservice dosing, format upgrades and fortification. Douglas Insights splits that 2.35-point volume leg into 0.94, 0.58, 0.47 and 0.36 points.

Household reach contributes 0.94 points. More than 99% of Nigerian households use bouillon cubes, against less than 20% for branded wheat flour, and more than 100 million cubes are sold there every day, according to a BioAnalyst estimate published on allAfrica. Nestle already sold more than 100 million cubes and tablets a day in Central and West Africa in 2011 ([Nestle Central and West Africa, 26 March 2012](https://www.nestle-cwa.com/en/media/newsandfeatures/iron-fortified-maggi)). Penetration that high means volume now tracks births and new households rather than first-time buyers, so the leg is steady rather than spectacular. Unilever says Knorr alone sells 600 bouillon cubes every minute, which Douglas Insights converts to about 315 million cubes a year for that single brand. The count climbs from 141.8 billion cube-equivalents in 2025 to 145.1 billion in 2026 and 178.9 billion in 2035, and Douglas Insights credits household reach with 40.0% of that gain.

Foodservice dosing adds 0.58 points. Unilever reported 15% underlying sales growth for professional bouillon and seasonings in 2023, with the Knorr Professional range in more than 65 countries ([Unilever, 30 August 2024](https://www.unilever.com/news/news-search/2024/the-global-bestseller-behind-knorrs-5-billion-success-story/)). Canteens, quick-service chains and caterers buy stock in granule tubs and paste buckets, and each new outlet locks in repeat orders for the same stock base. Foodservice dosing supplies 24.7% of the volume gain in our model, more than any single format change.

Format upgrades contribute 0.47 points. Shoppers in Europe and North America move from cubes to jelly pots and bone broth concentrates; Premier Foods launched OXO bone broth and OXO ready-to-use stock in its year to 28 March 2026 ([Premier Foods, 14 May 2026](https://data.fca.org.uk/artefacts/NSM/RNS/fb0fbf5b-aeb9-4c50-aba4-7106f9cc1a2a.html)). Each upgrade adds cube-equivalents because pots are portioned for one pan rather than one cup.

Fortification adds 0.36 points. Nigeria now has a voluntary standard that allows bouillon makers to add folic acid (vitamin B9), vitamin B12, iron, zinc and iodine, and health agencies are assessing whether to make it mandatory. Fortified bouillon cubes could prevent up to 16.6 million anaemia cases in Nigeria, according to research cited by the Associated Press. Douglas Insights expects fortified variants to reach 14.6% of African cube volume by 2035, up from our 2025 estimate of 6.2%.

## Which sodium headwinds and cooking shifts hold back stock cube volumes?

Two headwinds remove 0.86 points from stock cube volume growth: sodium caps and salt guidance subtract 0.52 points, and the shift to liquid stock and scratch cooking in mature markets removes 0.34. Without them, Douglas Insights puts cube-equivalent growth at 3.21% instead of 2.35%.

Sodium rules cost 0.52 points. South Africa's R214 ceiling of 13,000 mg per 100 g from 30 June 2019 is 27.8% lower than the 18,000 mg level that applied from 30 June 2016 ([R214](https://www.health.gov.za/wp-content/uploads/2025/07/Sodium-reduction-Regulations-R214-of-20-March-2013.pdf)). Lower-salt cubes need more flavour from yeast extract and fat to taste the same, and a portion of 5 cubes for 6 people still delivers 1.8 g of salt per person, about 30% of the daily intake, according to Nestle's own calculation. Nigerian public-health groups have warned that average salt intake there already reaches 10 g a day, twice the 5 g [World Health Organization](https://www.who.int/) (WHO) limit.

Liquid stock and scratch cooking remove 0.34 points. Unilever said Knorr grew low single digits in 2025, with a slight decline in developed markets offset by volume and price in emerging markets ([Unilever, 16 February 2026](https://www.unilever.com/news/news-search/2026/whats-behind-unilevers-2025-full-year-results/)). That loss lands mainly on the North American and European cube aisle, where ready-to-use cartons compete for the same pan.

Europe's USD 1.94 billion rises to USD 2.49 billion by 2035 at 2.53% a year, as pot formats offset flat cube counts in the United Kingdom, Germany and Spain. Asia Pacific holds USD 1.75 billion and grows 4.86% to USD 2.81 billion, driven by foodservice granule demand. The Middle East and Africa holds USD 1.57 billion in 2025 and reaches USD 2.79 billion, nearly level with Asia Pacific by 2035. Latin America records USD 1.1 billion today and USD 1.61 billion in 2035, growing 3.84% on chicken tablets. North America is the smallest region at USD 884.0 million, reaching USD 1.03 billion at 1.58%.

The wildcard is Nigeria. If its voluntary fortification standard turns mandatory, compliance costs would favour multinationals with premix lines, and our Middle East and Africa rate would move 0.4 points either way.

## How much does a single stock cube cost at kiosk, supermarket and foodservice level?

Stock cubes sell to retailers and wholesalers at an average USD 0.0511 per 4 g cube-equivalent in 2025, rising 1.62% a year. Douglas Insights price bands run from about USD 0.03 to USD 0.06 per open-market cube to USD 0.10 to USD 0.12 per cube-equivalent in jelly pots.

## Which sodium and fortification rules must stock cube producers comply with?

Stock cube producers must comply with two families of rules: sodium ceilings such as South Africa's 13,000 mg per 100 g limit under R214, and fortification standards such as Nigeria's voluntary bouillon code. Together they shape recipes for roughly a fifth of the USD 7.25 billion market.

R214 was published on 20 March 2013 and phased in sodium limits by food category, with stock cubes, powders, granules, emulsions, pastes and jellies at 18,000 mg per 100 g from 30 June 2016 and 13,000 mg from 30 June 2019 ([Government Gazette R214](https://www.health.gov.za/wp-content/uploads/2025/07/Sodium-reduction-Regulations-R214-of-20-March-2013.pdf)). NAFDAC, the National Agency for [Food and Drug Administration](https://www.fda.gov/) and Control, is assessing a mandatory version with the Global Alliance for Improved Nutrition (GAIN).

## Can fortified bouillon cubes close iron, iodine and folate gaps?

Fortified bouillon cubes already deliver micronutrients at scale: Nestle counted 52 billion iron or iodine fortified Maggi servings in Central and West Africa in 2014. Our base case for stock cubes ends at USD 10.7 billion in 2035, built on a 2.35% volume leg and a 1.62% price leg. A slower path lands at USD 9.29 billion and a faster path at USD 12.1 billion; the gap reflects how quickly fortification and pot formats spread.

The slower case uses 1.40% volume and 1.10% price, the outcome if more governments copy South Africa's R214 ceilings and cube counts fall in Europe and North America. The faster case uses 3.15% volume and 2.05% price, the outcome if Nigeria makes fortification mandatory and fortified cubes carry a premium. The Stock Cube Sodium-per-Cent Index is a Douglas Insights model built from 11 inputs: 4 format prices, 4 format volumes, 2 R214 sodium ceilings and the 4 g cube weight. It measures how many milligrams of sodium a shopper buys for one US cent in each stock cube format, rebased so hard cubes equal 100.

At the 13,000 mg ceiling a 4 g cube holds 520 mg of sodium, down from 720 mg under the 2016 limit. Divided by our format prices, hard cubes deliver 118 mg per cent and score 100. Powders and granules score 75.6, tablets 72.1 and jelly and paste pots 40.8.

The finding: the cheapest stock cube format is also the cheapest source of sodium in the kitchen, at 2.4 times the sodium per cent of a jelly pot. Hard cubes account for 96.0 billion of the 141.8 billion cube-equivalents in our count, or 67.7%. Any sodium rule or fortification code therefore lands mostly on the low-price cube, which is why we hold the hard cube growth rate at 3.62%, below the 4.01% market average.
