Paying USD 8.20 for a dozen wholesale eggs in February 2025, the all-time high recorded after highly pathogenic avian influenza (HPAI) forced the culling of 50.7 million laying hens ([USDA Economic Research Service, 3 June 2025](https://www.ers.usda.gov/data-products/charts-of-note/chart-detail?chartId=112677)), a sandwich chain's sauce buyer had to choose between absorbing the yolk bill and moving part of the mayonnaise order to an egg-free emulsion. ## Why are wholesale egg shocks and avian flu pushing sauce buyers toward vegan mayonnaise?

Vegan mayonnaise volume grows 6.35% a year, from 176.3 million kg in 2025 to 326.3 million kg in 2035, because egg cost shocks, brand-owned vegan lines, allergen menus and flavour extensions all add buyers. Douglas Insights splits that leg into 2.15, 1.85, 1.20 and 1.15 points.

Egg cost shocks contribute 2.15 points. Wholesale eggs hit USD 8.20 a dozen in February 2025 and fell to USD 3.74 by April, a USD 4.46 swing inside two months, while retail eggs dropped to USD 5.12 after the March peak ([USDA ERS](https://www.ers.usda.gov/data-products/charts-of-note/chart-detail?chartId=112677)). A yolk-based mayonnaise line carries that volatility straight into its ingredient bill; a starch or pea protein emulsion does not. The February price was 2.19 times the April price, so a buyer who budgeted on spring quotes would have seen the sauce line overrun, which is the moment a second, egg-free recipe starts to look cheap. Food manufacturers that qualified an egg-free vegan mayo during the shortage now keep it as a second recipe, and Douglas Insights credits egg cost hedging with 33.9% of the volume gain to 2035.

Brand-owned vegan lines add 1.85 points. Hellmann's sells a certified vegan dressing and spread built on canola oil and modified potato and corn starch, marketed with the line that the eggs were removed, not the taste. Every canteen that drops egg from one sauce removes a labelling risk across the whole tray.

Flavour extensions add 1.15 points. Three headwinds remove 1.90 points from vegan mayonnaise volume growth: the premium over egg mayo and texture gaps take 0.95, shelf exits and plant-based fatigue take 0.55, and naming rules take 0.40. Douglas Insights puts the unconstrained volume leg at 8.25% a year instead of 6.35%.

Premium and texture cost 0.95 points. Our average vegan mayo price of USD 5.84 per kg sits above most private-label egg mayonnaise, and starch-set emulsions can weep or thin under heat on a grill line. ## Where is egg-free mayo growing fastest, from US natural grocers to Asia Pacific convenience stores?

North America leads vegan mayonnaise revenue with USD 405.7 million in 2025, 39.4% of the total, but Asia Pacific grows fastest at 11.45% a year as egg-allergy menus in Japan widen the buyer base. Europe follows at USD 336.7 million and 7.85% growth.

North America rises from USD 405.7 million to USD 805.6 million by 2035, growing 7.10% a year, because the region is home to Vegenaise, JUST Mayo and Hellmann's vegan jars and now grows from a high base. Europe's USD 336.7 million reaches USD 716.9 million, carried by caterers that drop the Annex II egg mark from sauces. Asia Pacific holds USD 155.5 million today and USD 459.8 million in 2035, the fastest climb, because school-lunch and foodservice kitchens in Japan already use egg-free mayonnaise-type condiments. Unilever dominates vegan mayo with an estimated 21.4% share in 2025, about USD 220.3 million, through Hellmann's vegan dressing and spread. With Danone at 9.8% and Kraft Heinz at 8.3%, the top three hold 39.5% of vegan mayonnaise revenue; specialists and private label hold the rest.

Douglas Insights estimates those shares from shelf counts and brand disclosures, since no company reports vegan mayonnaise as a line.
