On 11 August 2026 the US Food and Drug Administration published a proposed rule in the Federal Register that would make notification mandatory for any food substance marketed as generally recognized as safe, ending the self-affirmed route that many botanical extracts use, with comments due by 9 December 2026. Tannic acid food grade sits on the other side of that line: FDA affirmed it as safe by regulation in 21 CFR 184.1097, with written limits for each food category, so buyers who switch from self-affirmed tannin extracts land on an ingredient with its paperwork already filed. Douglas Insights values tannic acid food grade at USD 145 million in 2025, USD 144.6 million before rounding, and forecasts USD 253 million by 2035, a compound growth rate of 5.77% a year. What is tannic acid food grade, and what falls outside this study?

Tannic acid food grade is hydrolysable gallotannin extracted from nutgalls, tara seed pods or sumac and refined to the Food Chemicals Codex specification, worth USD 145 million in 2025. FDA describes it as a yellowish-white to light brown powder with an astringent taste, and allows it as a flavouring agent, flavour enhancer, processing aid and pH control agent. Seven applications make up the tannic acid food grade total: wine and beer fining, fruit juice and tea beverage clarification, dietary supplements and nutraceuticals, confectionery, bakery and dairy flavouring, meat and collagen casing processing, pet food and feed palatants, and rendered fats and edible oils.

The tannic acid food grade study covers three sources, gallnut, tara pods and sumac, and three forms, powder, granules and liquid. Industrial tannic acid for leather tanning, ink, dyeing and metal treatment, pharmaceutical grade sold to drug makers, and condensed tannins from quebracho, mimosa and chestnut sold as tanning extracts are excluded.

Why does the August 2026 GRAS proposal favour tannic acid food grade?

The 11 August 2026 proposal favours tannic acid food grade because its safety status rests on a codified FDA regulation, while an estimated 1,000 substances rely on GRAS conclusions that FDA never saw. Under the proposal, companies would have to notify FDA before marketing a substance as GRAS, with a time-limited streamlined submission for uses already in commerce and an 18-month compliance period after the rule takes effect. Grape seed, green tea and oak tannin extracts sold to beverage and supplement makers often rest on self-affirmed dossiers, and their suppliers face filing work that Douglas Insights puts at USD 150,000 to USD 400,000 per substance. Douglas Insights estimates that about 6% of US buyers of tannin extracts for beverage clarification and flavouring move part of their volume to affirmed tannic acid food grade between 2027 and 2029, adding about 0.3 points a year to US volume growth over that window. The August 2026 date runs through this report: it supports US volume, it favours suppliers with clean Food Chemicals Codex documentation, and it separates the slower and faster scenarios.

What drives tonnage in tannic acid food grade?

Four drivers lift tannic acid food grade volume by 4.1% a year, and fining in wine and beer is the largest. The International Organisation of Vine and Wine estimated 2025 world wine production at 232 million hectolitres, up 3% from the very low 2024 harvest, in its 12 November 2025 first estimates. Winemakers add gallotannins at 5 to 30 grams per hectolitre to precipitate unstable proteins, protect colour and guard against oxidation, practices set out in OIV resolution OIV-OENO 613-2019, and brewers dose tannic acid at 2 to 6 grams per hectolitre to remove haze-forming proteins. Douglas Insights estimates wine and beer take about 1,420 tonnes of tannic acid food grade in 2025 and grow 3.4% a year in volume as more wineries fine with tannin instead of bentonite alone.

Clean-label beverage clarification is the second driver. Juice and ready-to-drink tea makers use tannic acid food grade with gelatin to clear haze without synthetic fining agents, and FDA allows up to 0.005% in nonalcoholic beverages. Douglas Insights estimates clarification volume grows 4.2% a year, led by apple, grape and tea drinks in China, India and Southeast Asia, where packaged beverage sales grow faster than in Europe.

Supplements are the third and fastest driver. Brands sell tannic acid food grade in polyphenol blends and gut-health capsules, and demand for plant polyphenols in supplements rose through the 2020s. Douglas Insights estimates supplement use of tannic acid food grade grows 7.1% a year in volume from about 690 tonnes in 2025, the highest rate of any application, helped by the GRAS proposal that makes affirmed ingredients easier to defend.

Collagen casings and pet food are the fourth driver. Casing makers use tannic acid to cross-link collagen and firm the casing, and pet food producers use it in palatants and as a natural antioxidant. Douglas Insights estimates these two uses add about 0.6 points a year to tannic acid food grade volume growth as sausage output rises in Asia and premium pet food keeps growing. Together the four drivers take volume from 5,240 tonnes in 2025 to about 7,830 tonnes in 2035.

What holds back tannic acid food grade volume and margins?

Three restraints trim about 1.4 points a year from tannic acid food grade growth, and dependence on Chinese gallnuts is the first. Douglas Insights estimates that about 70% of the world’s gallnut tannic acid comes from gallnuts gathered in Guizhou, Hunan, Hubei and Sichuan, where harvests swing by 20% to 30% with weather and aphid cycles. A poor harvest raises raw gallnut prices within months and pushes buyers toward tara, which removes about 0.5 points a year from volume growth in a typical year.

Substitution is the second restraint. Winemakers can use chestnut, quebracho or grape tannins instead of gallotannin, and brewers can use silica gel or PVPP to stabilise beer. Douglas Insights estimates substitutes cap tannic acid food grade growth in wine and beer at about 3.4% a year in volume, below the rate of the other applications, a drag of about 0.6 points a year on the total.

Tight dosage limits are the third restraint. FDA caps tannic acid at 0.001% in meat products and 0.015% in alcoholic beverages, and the astringent taste limits use above those levels anyway. Douglas Insights removes about 0.3 points a year from tannic acid food grade volume growth because each tonne must be spread across very large volumes of food.
